Ingredients
2 eggs, beaten
1 tsp salt
1 tsp garlic powder
1 cup Good Sense® Walnuts, ground (may substitute with Almonds, Pinenuts or Sunflower Nuts)
1 cup Panko breadcrumbs (may substitute with regular breadcrumbs)
2 Tbsp grated parmesan cheese
8-6oz tilapia fillets, thaw if frozen
1/4 cup all-purpose flour for dusting
1/2 cup vegetable oil or butter
8 lemon wedges
Pepper to taste
Directions
1. In a shallow dish, combine nuts, breadcrumbs and parmesan cheese; set aside.
2. Season tilapia fillets with salt, pepper and garlic powder. Dust with flour; shake off excess. Dip each fillet into beaten eggs; coating both sides. Coat each side with nut mixture. Transfer to shallow dish.
3. Heat vegetable oil or butter in large skillet on medium heat. Cook 2 or 3 fillets at a time until golden brown on both sides, about 3 to 5 minutes per side. Cook remaining fillets.
4. Transfer to serving dish and serve with lemon wedges.
