Better Breakfast Muffins

1 Stick Softened Unsalted Butter
¼ Cup Packed Light Brown Sugar
1 Large Egg, Lightly Beaten
1 Cup Plain Greek Yogurt
¼ Cup Maple Syrup
½ Cup Good Sense® Dietary Snack Mix®
1 Cup All-Purpose Flour
1 Cup Wheat Bran
1 Teaspoon Baking Soda
¼ Teaspoon Salt
¼ Teaspoon Cinnamon


Preheat Oven to 400°F and position rack in the middle of the oven. Grease muffin tin or line with muffin cups. In a large bowl cream together butter and brown sugar, using an electric mixer, until light and fluffy. Beat in the egg, Greek yogurt, maple syrup, and Dietary Snack Mix®. In a medium size bowl whisk together flour, wheat bran, baking soda, salt, and cinnamon. Add the flour mixture to the yogurt mixture and stir until just combined (batter will still be lumpy). Using a 1/3 Cup Measure, divide the batter into the prepared muffin tin. Place muffin tin in the oven and bake for 15-20 minutes until golden brown or toothpick inserted in the center of the muffins comes out clean. Let muffins cool in the tin for 10 minutes then turn out onto a cooling rack and enjoy.
